Grilled Green Mango Drink (Aam-Porar-Sorbot)

2 green mango
1 teaspoon salt
1/8 teaspoon pink salt
1 1/2 tablespoons sugar:
1 teaspoon chat Masala
3 cups chilled water:
Ice cubes (optional)

Serves 3 people.
Please Note: Green mangoes, pink salt and chat masala can be found at any Indian, Afro/Bangladeshi and Sri-Lankan stores.

1. Boil/grill the green mangoes.

2. Take out the pulp and transfer into a blender and blend it with sugar and salt. The amount of sugar and salt may vary with the sourness of the mango and also according to your taste. I like the sourness of the mango and like it less sweet. So, I have added 1 teaspoon of salt and 1 1/2 tablespoon of sugar.

3. To make the drink, add chilled water and the chat masala, the pink salt and blend it. Check for the salt and sugar, adjust it according to your preference. Serve with ice cubes if you like.

Taste best with an enhanced smoky flavour when the mangoes are grilled.

You can scale up the amount and store it up to 2 weeks in fridge after step 2. When you come back tired from work during the summer, use the pulp to make yourself a refreshing drink.

Traditionally, at home dry roasted cumin powder is used instead of chat masala. I love to use chat masala. So, if you don’t have chat masala, simply use dry roasted cumin powder.

Traditionally freshly crushed mint leaf is also added. If you like fresh mint don’t hesitate, give yourself a treat.

If you wish you can also add white rum or vodka.


I was brought up in an eastern state of India called West Bengal, where the year sees six seasons (Hritu/kal) namely Grishma (Summer), Barsha (Rain), Sarat (Autumn), Hemanta, Sheet (Winter) and Basanta (Spring). Each of the seasons has their own specialties. Each season had a festival to celebrate, characteristic climate and of course its special food. Grishma-kal or Summer in my homeland is fiery hot, temperature reaching 48° C with high humidity. A very difficult weather to step out of home for the day. However, this burning season has a rewarding special food and that is mango. While different varieties of ripened KING are enjoyed in the whole world, in India we also enjoy the green one. Mangoes, both green and ripened are the mandatory members of my father’s shopping tote, while the first mango bought in the season is offered to the Holy Ganges by my mother. As we are hitting summer in Germany with temperature touching 30° C and above, it surely takes me back to those hard days with sweet memories. Whenever I came back home sweaty and tired, I was not allowed to take bath directly as I caught cold easily. So, before the shower, the protocol was to wash your hand and feet, sit and cool down with a glass of Aam-Porar-Sorbot.
Popularly known as ‘Aam-Paana’, we Bengalis call it ‘Aam-Porar-Sorbot’ (Aam = mango, Pora = grill, Sorbot = cold breverage). A perfect drink to cool you down. Instead of making the drink in small batches, mother use to make a stock pulp mixture and store it for the whole week. It was easier to just mix the pulp with water and serve it as fast as possible. Also, to make it even easier, she boiled the mangoes instead of grilling it. Grilling was done in special occasions. Since it was also served to guest and other visitors at home, I saw my mother making it for uncountable times. I have also helped her in adjusting the taste or making the pulp. And yes, that’s how I learnt it.
Last Friday when I came back home from work, I was longing for a glass of Aam-Porar-Sorbot kept ready for me by Ma. Immediately called her to hear ‘make it yourself’. Her voice itself works as an enthu-booster. Next day it was ready for the whole week. I am planning to grill some mangoes in a grill party to get the smoky-charcoal flavour.
