Chicken Curry

3 pieces of chicken - thighs/legs best
1 small onion
3-5 cloves garlic
2-3cm ginger
5-6 cardamon pods
4-5 clove pods
2-3cm stick cinnamon
3-4 teaspoons curry powder
3-4 teaspoons tumeric
1-2 teaspoons chillie powder (more if people like spicy/hot food)
juice 1-2 lemons (depends how juicy)

Serves for 3 people

1. In a small amount of canola oil fry onions and garlic; then when soft and golden brown add cloves, cardamon and cinnamon and quickly stir in.

2. Add chicken pieces and cover the chicken with the onions etc. Then add the curry powder, chillie and tumeric and cover the chicken with this. Squeeze the lemon juice and then cook slowly covered for about 20 mins until chicken is well cocked.


This is a typical Sri Lankan chicken curry and is great with rice and lentils - enjoy!
