Spinach Pie (Zeljanica)

1 pack jufka (phyllo pastry/dough)
300g freshly chopped spinach
Feta cheese
Young cheese (cottage cheese is also possible)
4 eggs
Salt and pepper
1 glass milk and olive oil

1. For the filling, mix spinach, feta cheese and young cheese with the eggs, add salt and pepper to taste.

2. Lay the filling between 2-3 layers of dough, then cut into quadrats and pour over a mixture of milk and olive oil.

3. Bake at 220 C until it is light brown. Cover with cotton cloth and serve warm.


Zeljanica is a traditional Bosnian dish that my mother and grandmother used to make and is a perfect starter or even a main course for lunch. Served best with yoghurt or ayran.
