Ingredients

5 medium eggplants
2 tomatoes
1 garlic plant
3 eggs
Oil, pepper and salt (As much as you would like but originally it is not a very spicy food).
Material for 4 people

1. First grill the eggplants in the oven; peel them and then chop them.

2. Pour the tomatoes in boiling water, after a few minutes take them out, peel them and then chop them.

3. Chop the garlic and pour it into the hot oil that has already been prepared on the stove and fry it until the garlic is slightly browned.

4. Then add the prepared eggplants and tomatoes to the same pan and fry; continue to do this until their water is drained and it is fried.

5. Now add a little salt and pepper to it and put the result of the cooking so far on one side of the pan and break the eggs on the other side of the empty pan, and stir them until they are mixed and fried.

6. Our Mirza Ghasemi is ready and you can put it in a dish and serve it with decoration of coriander and/or mint.

It is usually served with bread.
