Cheese Breadballs (Pão de Queijo)

Ingredients

800g cassava powder (the same as tapioca flour)
1 cup water
1 cup milk
1/2 cup of oil
2 eggs
100g of grated parmesan cheese (you can use other cheeses as mozzarela, but preferably hard cheeses)
Salt to taste

1. In a pan, add water, milk, oil and salt and boil.

2. In another pan, add the powder and gradually add the liquid hot mixture - you will observe a change in the texture (it will become elastic) and color (it will look cooked). You may not need to use the 800g, so put it slowly and knead the dough until it comes out of your hand: that's the point. If the dough is too liquid add more tapioca flour.

3. When the dough is warm, add cheese and eggs and mix well. You may add the double amount of cheese and have a final pão de queijo with more cheese taste.

4. Grease your hands with oil and roll up balls of 2cm in diameter - you can also do it with two spoons.

5. Arrange the balls on an oiled baking mold, leaving a space between them.

6. Bake in a preheated medium oven (180º C) for about 40 minutes.

Background

Pão de Queijo is a delicious traditional food from Minas Gerais state, where I live in Brazil.
I like to eat it during the breakfast or evenings with a cup of coffee or coffee with milk, it is a perfect combination.
Pão de Queijo always remember me the time I am with my family having a nice talk, it is a comfort food.
I learnt how to cook it with my mother when I was a teenager and I still cook it often nowadays.
When I want to surprise friends from other states or countries, I cook it and the joy is guaranteed.
